Uchellu Chutney Powder ( Niger / Khurasni) - Gun Powder

Uchellu, also known as Gurellu in Kannada and Khurasni in Marathi, refers to Niger seeds (botanical name: Guizotia abyssinica). These small, glossy black seeds are commonly used in North Karnataka and Maharashtrian cuisine to make chutney powders, spice mixes, and as a flavoring ingredient in various dishes. They resemble elongated sesame seeds but have a distinct nutty and aromatic flavor. Traditional North Karnataka condiment made from roasted niger seeds, spices, and lentils. Nutty, aromatic, and perfect with hot rice, idli, or dosa.   • Uchellu(Niger seeds / Huchellu)
  • Dry red chilies(adjust to taste)
  • Garlic(optional)
  • Tamarind
  • Jaggery(optional)
  • Salt
  • Curry leaves(optional)
  • Oil
  • Dry Coconut

Ingredients

Groundnuts, Garlic, Kashmiri Chilli, Salt, Jaggery, Jeera (Cumin), Tamarind.

Roast uchellu

Dry roast the uchellu on medium flame until it pops slightly and gives a nutty aroma. Keep aside to cool.

Roast chilies

In the same pan, heat a tsp of oil and roast red chilies until crisp. Add curry leaves and roast until dry.

Cool

Let everything cool completely.

Grind

In a mixer jar, add roasted uchellu, red chilies, roasted gram dal, tamarind, salt, jaggery, and garlic. Grind coarsely (not too fine).

Store

Store in an airtight container.

📝 Notes & Tips

Mix with hot rice and a spoon of ghee or oil. Sprinkle over idli or dosa with oil. Tastes amazing with jolada rotti (sorghum flatbread).

  • We don't use preservatives, keep them refrigerated always
