- Raw mango(about 500g, chopped)
- Salt
- Red chili powder
- Mustard seeds
- Fenugreek seeds(methi)
- Asafoetida
- Mustard Oil

👩🍳Instructions
Prepare mangoes
Chop raw mangoes into small bite-sized pieces. Mix with salt and set aside for 1-2 hours to release moisture.
Roast fenugreek
Dry roast fenugreek seeds until light brown and fragrant. Cool and grind into coarse powder.
Temper spices
Heat mustard oil. Add mustard seeds and let them splutter. Add asafoetida and stir.
Mix
Add red chili powder and ground fenugreek powder. Stir briefly, then pour over the salted mango pieces. Mix well.
Rest & store
Let sit for 1-2 hours for flavors to blend. Transfer to a clean glass jar. Store in refrigerator for up to 2 weeks.
